Beer Details:
Okay is a honey beer. It was made from a rich rye beer produced in May 2024. Spontaneous fermentation took place in old red Bordeaux barrels for a little over two years.
We look to find barrels which already provide a suggestion of honey. A combination of malty/floral aromatics, as well as enough body and perceived sweetness to aid the idea of honey.
Raw Scottish heather honey is then added just prior to bottling. Made at Heather Hills Farm, it is an unbelievable smokey, earthy and potent honey that drives the aromatics in the finished beer, as well as adding weight and an almost stickiness to the mouthfeel.
Adding it just prior to bottling provides the sugar for conditioning as well as trapping the delicate earthy aromatics in the bottle.
