In July 2023 we made a light red wort from crystal and caramel malts. Aged new world hops were added during the boil to add an impression of fruit without the bitterness of the fresh hops. The beer underwent a slow spontaneous fermentation in Marsala wine barrels for three years. The lees were stirred in the barrel during the fermentation to improve texture.
