We have been working on our komucha for some time and are now ready to release a small number in bottles which will be filled to order. Traditionally a fermented sweet tea, we make our kombucha the way a west country brewer should, using local hops in place of tea and sweetened with pear juice instead of just cane sugar. This batch uses Archer hops developed and grown in the west country and juice from fantastically obscure pear varieties grown just a few miles from the brewery by Day's Cottage.
