The fifth edition of our effervescent, bright, and delicate saison, Spectre Sister.
This is a blend of two extra pale beers produced in July and August 2020. The worts were made with maize, wheat, oats and rice to produce a light, yet pleasingly full beer. Well-aged hops were used in the boil to allow the wild lactic acid bacteria to produce assertive acidity.
Fermentation took place in a mixture of old bourbon and freshly emptied cider barrels (from Oliver's Cider and Perry, and Ross-on-Wye Cider and Perry Company). Average barrel time was just under forty months. To be selected for Spectre Sister, barrels needed to possess an bright lactic acidity, have minimal oxidative character, and be brilliantly clear. We will always include a portion of beer aged in American oak, to lend a creamy character to balance and compliment the lactic acidity.
The resulting blend received a large dose of primings to produce lively carbonation, before maturation in bottle through winter and spring. The finished beer is bright, funky and sharp, with heady aromatics from the spirit barrel, and a creamy mouthfeel.
