Bière de Coupage is a blend of young and old spontaneously fermented beers. Our first release trying to capture the distinct qualities of young and well aged barrels.
The young beer was brewed in October 2025 with floor malted Pilsner malt, wheat and whole-leaf hops fresh from the 2025 harvest. It brought a bright, fresh character of both the hops and grain. We were particularly interested in presenting just the right amount of a captivating sulphur note, which we find very enjoyable in some famed German lagers, and that we see in some of our young barrels.
The old beer was brewed in April 2024 from rye, floor malted Maris Otter and aged hops. We chose a very characterful barrel, to ensure its flavours shone once blended. It brought an aromatic intensity and rich juicy acidity to produce both balance and intrigue in the finished blend.
