3x 750 ml Bottles
This is our third edition of Saison Cider Cask, and it has been a long time coming, with the last one released over two and a half years ago.
The beer stems from our early work with cider maker Tom Oliver, which led to Saison Cider Cask (and Spectre Sister) becoming staples of our slowing revolving core output. It is always fermented in freshly emptied cider barrels, with a mixture of our spontaneously collected house culture and any remaining lees from the cider making. The beer is finished with a whole-leaf dry hop, chosen to suit the flavours present from the fermentation and barrels in each individual release.
This edition is a blend of five barrels (from four brews), produced in September 2019, April 2020 and December 2020. The contrasting brews used a variety of grains and a mixture of aged and fresh European hops. Fermentation took place in fresh cider barrels from Oliver's Cider and Perry, as well as Ross-on-Wye Cider and Perry Company. The finished blend was dry-hopped with 2021 season Celeia, before conditioning in bottle for two months prior to release. This beer has leap-frogged multiple other batches in our bottle conditioning room, as the dry-hop aroma is currently singing.
