Beer Details:
We got together with Sam, from London's Boxcar Brewery, to brew a spontaneously fermented and barrel-aged take on their phenomenal Double Dark Mild.
The collaboration ended up consisting of three brews, resulting in two distinct blends. One fermented in bourbon barrels with the blending leaning more towards a vatted porter, the other fermented in Marsala wine casks with its blend leaning more towards a Flemish Red-Brown ale (this will benefit from a touch more time in bottle, so is set for release next month).
Old Dark Mild Bourbon Barrel is made from a blend of three beers, produced in the July's of 2021 and 2022, using a double mash to add depth and body to the beer. The grist was made from British ale malt, roasted and crystalised speciality malts, and rolled oats. Fermentation took place solely in Buffalo Trace bourbon barrels, adding wonderful heady aromatics of burnt sugar, vanilla and dark roast coffee beans. The older beer brought a rich sweetness and significant acidity to the blend. The younger beer was more tannic, dry and less acidic, adding structure to the body and poise to the finish.
