It was made from a rich rye beer produced in May 2024. Spontaneous fermentation took place in old red Bordeaux barrels for a little over two years.\u003c\/p\u003e\n\u003cp\u003eWe look to find barrels which already provide a suggestion of honey. A combination of malty\/floral aromatics, as well as enough body and perceived sweetness to aid the idea of honey.\u003c\/p\u003e\n\u003cp\u003eRaw Scottish heather honey is then added just prior to bottling.
