Beer Details:
Chuckleberry is a blend of three brews produced in April 2020, April 20216 and March 2022. They were made from turbid worts, using rye malt and aged hops. Fermentation and maturation took place in red Bordeaux and white Burgundy barrels, before the addition of Chuckleberries.
The fruits are a cross between a redcurrant, gooseberry and jostaberry (a gooseberry/blackcurrant cross) and possess the acidity, tannin and striking aromatics we prefer when designing a fruit beer.
We chose to blend three barrels which were relatively soft and full on the palate to accommodate the fruit's acidity and tannin. There were also complementary aromatics from the wine and French oak, and a balancing funk to enhance the fruit.
Once a four month fruit refermentation was complete, the beer was then dry hopped with small amounts of whole-leaf Simcoe and Mosaic. This subtle addition worked wonderfully to intensify the berry's flavour, while not deflecting from the intention of making a fruit-focused beer.
Finally the beer bottle-conditioned naturally for a relatively short two months, before release.
